In chronological reverse weight order (so starting with heavyweight from inception to present, then LHW from inception to present and so on and forth)
Andrei Arlovski wins interim title - promoted to undisputed champ after never unifying with Mir (1)
Antonio Noguiera - never fought Lesnar, lost the belt to Mir who later unified with Lesnar (2)
Frank Mir - lost when he attempted to unify with Lesnar
Shane Carwin - defeats Mir for a separate interim title and lost to lesnar
Fabricio Werdum - defeats hunt for interim, unified when he defeats Velasquez
Ciryl Gane - defeats Derrick Lewis and loses to Ngannou in unification attempt
Randy Couture - defeats chuck Liddell and successfully unifies with Tito defeating at UFC 44
Jon Jones - Defeats Ovince St. Preux and is later stripped for violating the UFC drug policy (3)
Robert Whitaker - Defeats Yoel Romero and is promoted to undisputed after GSP beats Bisping and they both retire within 2 months (4)
Israel Adesanya - defeats Gastelum and unifies defeating Whitaker
GSP - Defeats Hughes for the interim title and unifies with Serra beating him
Carlos Condit - defeats Nick Diaz 4 rounds to 1 and attempts to unify, losing to GSP
Colby Covington - defeats RDA for interim. Conflicting reports of who refused what, but Covington was stripped, defeated Lawler in his next fight before fighting Usman as No. 1 contender (5)
Tony Ferguson - defeats Kevin Lee, later stripped during wiregate when he pulls out on one weeks notice on april fools day on his fourth booking against Khabib (6)
Dustin Poirier - beats Holloway, comes up short to Khabib
Justin Gaethje - defeats Ferguson, loses to Khabib (beating a lanky and pointy wing tattoo boy for an interim title is the worst base for beating Khabib)
Conor McGregor - KOs Mendes, unifies by beating Aldo
Jose Aldo - defeats Frankie Edgar, promoted to undisputed champ when McGregor is stripped/vacated for inactivity and intent to not return to 145 (7).
Max Holloway - finishes Anthony pettis and unifies by beating Aldo
[Yair is reigning interim champ and omitted for this count]
Renan Barao - defeats Urijah Faber and is promoted to Undisputed Champion after some defenses and defends against Urijah Faber again. 
Petr Yan - defeats Sandhagen while Aljo is injured, later loses to Aljo in his unification bout.
Brandon Moreno - defeats Kai Kara France and finishes Figuereido to unify in his next bout.
8/22 interim title reigns or 36% of interim champions never even attempt to unify
Interim champions are 7-7 when fighting the undisputed champion in unification bouts.
Not sure what to make of this other than some are justified, others are about fight politics, and others are a cheap way to bolster a weak card. Also, interim champs are way more successful than I'd realized in capturing the undisputed title.
4 out of 8 who never unified were promoted to undisputed champ, so 11/22 become champ in their next fight or after defending the interim title.
